A Fall Mash

My friend Miranda served us a rich, satisfying mash at a potluck recently. It tasted like creamy potatoes, but we soon learned that it was actually something a lot more complicated, and much more nutritional. Don’t run away after reading the title; Miranda swears that she’s fed many skeptics the dish who’ve eagerly chowed down before learning its secrets. I’ll let her fill you in:

Creamy Healthy Vegan Cauliflower Mashed Potatoes

Miranda: Who does not love mashed potatoes?  But they always sink right down to the bottom of your stomach and sit there, all heavy potato, butter and cream.  So I looked up some recipes for creamy cauliflower mashed potatoes, then I substituted the cream, cheese, and butter for more healthy, vegan friendly options (I’m not a vegan, but try to avoid too much dairy)…SO!  Here’s what I came up with.  It is super delicious and my father and boyfriend- both happy to eat a giant plate of spaghetti carbanara- absolutely love it.

1 head of cauliflower
1/2 cup toffuti (tofu cream cheese) (the chive one adds some nice flavoring)
1/2 onion sauteed with 2 cloves minced garlic
1/4 cup almond milk
1/4 cup of soy cheese
celery salt
any other spices you want to add! I just kinda make it up as I go along

1. break apart the cauliflower into florets
2. steam the cauliflower until the florets are soft, but don’t crumble with touch
3. put cauliflower, almond milk, toffuti, onions, garlic, soy cheese, and all spices into the blender/food processor and puree, stopping every 15 seconds to stir and assure it doesn’t get too liquidy (although it will be a bit smoother than mashed potatoes)
4. eat, smile, and feel healthy and fulfilled!
